Sear the eggplant: Wipe the pan with a paper towel, turn the heat to high and add the remaining olive oil. Let this heat until the oil is nearly smoking. Add the eggplant and spread it out in as thin a layer as you can in the skillet. Let this sizzle for 1 to 2 minutes before stirring, then let it sit for a full minute before stirring again.

Instructions. Read directions and watch the video before starting- this recipe can be tricky. In a medium pot, over high heat, add water, rinsed white quinoa, salt, garlic powder, cumin, dried herbs, olive oil, and stir. Bring to a boil. Cover, lower heat to low, and simmer gently for 20 minutes.

Add peeled, cubed beets to a medium mixing bowl along with avocado oil (see notes for oil-free option), salt, and cumin. Roast beets for 35-40 minutes, or until fork tender and slightly golden brown / caramelized, tossing once at the 20-minute mark to ensure even baking.

Directions. Toss eggplant with salt and place in a colander set over a bowl. Let sit, about 30 minutes. Rinse and pat dry. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add celery; cook, stirring often, until softened, about 4 minutes.

Add diced tomatoes with juice, raisins, wine and vinegar. Cover and simmer on low or until eggplant and onion are very tender, stirring occasionally, about 15 minutes. Season caponata to taste with salt and pepper. Mix in fresh parsley. Transfer relish to serving bowl. Serve warm, at room temperature, or cold.
