The skins will slip off easily. Remove the stems, seeds, and cores. In a half-pint Mason jar, layer olive oil and roasted peppers, making sure the top layer is olive oil. Leave a 1 inch head space. Cherry peppers cut in half, with seeds removed. This is a nice middle ground if you want large pieces of cherry peppers and don't want heat from the seeds. This is a way of preserving the harvest of cherry peppers. They are first soaked in a brine of 1 part white vinegar to 3 parts cold water in a large glass or ceramic vessel for 3 weeks refrigerated.
