Orange Blueberry Muffins

3/4 cup orange juice, preferably fresh. 1 1/2 cups blueberries, fresh or frozen. Preheat oven to 375F. Line a 12-cup mufin tin with paper liners. In a medium bowl, whisk together flour, baking powder and salt. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and orange zest until smooth.

Preheat the over to 190 degrees C. Combine flour, salt, baking powder and baking soda in a mixing bowl and keep it aside until use. Coat blueberries with a little bit of flour to prevent them from sinking to the bottom while baking. Keep them aside. Combine orange zest and sugar in a mixing bowl.

In another large bowl, rub the orange zest into the sugar until the sugar is damp.
