I recently ordered a 150mm Sakai Takayuki 33 Layer Damascus Petty knife, but I got an email from the website informing me that the knife is currently out of stock for two weeks. They have offered to upgrade me to the "Kazan Aogami Super Petty 150mm" for free, whoever I can't seem to find any information about the knife.

Kazan HAP40 Hammered Gyutou 210mm (8.2") Japanese Chef Knives

Location. Pennsylvania. Jan 11, 2018. #3. I have only used the Takamura. It has great edge retention compared to most knives that I own. It is a very, very thin knife, probably the thinnest I have ever used. Comes with a very thin and fragile edge too. Sharpens fairly easy but not anywhere near as easy as carbon steel.

kazan series from chubo. Thread starter panda; Start date Jun 8, 2017;. I've said this before a few times, but my Kohetsu Hap40 is by far the worst knife I've ever bought. Profile, geometry and F&F of the blade all suck BIG time. Though good edge retention and decent enough to sharpen. panda O.G. KKF Supporting Member.

Kazan knives are well made and the steel is a Powdered Tool Steel with a rockwell 65-66 hardness, BUT it can be sharpened much like a softer steel. It also does not react to acids like Carbon Steel Knives. I like this steel MUCH more than ZDP 189 and in fact HAP40 is nick named "Voodo Steel." Kazan HAP40 knives rule in the kitchen.
