The tatin-style cooking softens the bitterness of the endives and makes them very tender. To make it even more tasty, I added some brie cheese. This is delicious ! Endives, roquefort and chestnut tarte Tatin: 220 g flour. 120 g butter. 1/2 tsp fine salt. 1 egg. 1-3 tbsp cold water. Combine flour with cold, cubed butter, salt and egg.
