In a 1-gallon stockpot, heat olive oil; add cracked crabs and sauté for 5 minutes. Add vegetables and bay leaves; continue to sauté for 5 minutes. Melt butter in a large saucepan over medium heat. Add onion and celery; cook until onion is translucent, about 5 minutes. Stir in flour and cook for 3 minutes, stirring constantly. Gradually whisk in chicken stock. Simmer until celery is tender, about 20 minutes, stirring occasionally. Stir in Brie cheese and allow to melt for about 5 minutes.

The Dakota's Crabmeat and Brie Soup. Heat 1/4 cup butter in pot; crack open blue crab shells with a heavy meat mallet or hammer. Add blue crabs to butter and saute for five minutes. Add vegetables.

8 pieces crabmeat. In a saucepan over medium heat, melt the butter. Add the onion and cook, stirring constantly until the onions are soft and translucent, do not let it brown. About 5-8 minutes. Whisk in the flour, stirring constantly until incorporated. Add the chicken broth and lobster base, continue to whisk constantly until mixture thickens.

Make a blond roux, and whisk into the soup pot. Slice the Brie into small pieces and add it to the pot. Stir until the cheese melts in completely. Add salt and pepper to taste. Right before serving, put the lump crabmeat in the bottom of the bowls, and ladle the hot soup over it. Sprinkle a very little cayenne over it and serve.

4. Remove outside rind from Brie and discard. Cut cheese into 1-inch cubes and add to stock, stirring constantly until cheese melts completely. Season soup with white pepper, cayenne and salt. Strain soup through a fine-mesh sieve; add jumbo lump crabmeat and serve.

Add flour slowly to avoid lumps, mix well. Add seafood stock and bring to a boil for ten minutes. To this, add the cream to the liking, crab meat and brie cheese. Simmer for another ten minutes. Season with cajun seasoning and Worcestershire sauce to taste. Garnish with green onions. Soup will be slightly spicy hot.

Instructions. Melt butter in a large Dutch oven over medium to medium high heat. Add onion and celery along with a couple large pinches of salt and pepper and cook for 4 minutes, stirring occasionally. Reduce heat to medium, add garlic and cook for 1 minute, stirring frequently. Add flour and stir to combine.

Crab and Brie soup. This recipe is based on my favorite soup from a restaurant in Salt Lake called Big City Soup. I was relatively heart broken when I came home for Fall Break in college and found out it had closed and there was no Crab and Brie soup waiting to welcome me home. Luckily, my mom is a PRETTY good cook and figured out the basic.
