A sprig of basil is the top three to four leaves of the plant. Be aware that as the basil plant grows bigger, the larger, older leaves will lose their flavor oomph. For best flavor and amazing aroma, snip from higher up the plant.

Create strips of lemon zest from fresh lemons. Then juice the zested lemons. Stir and cook the water, sugar, and lemon juice until the sugar dissolves. Remove from heat and add the basil leaves and lemon zest strips. Allow this to steep for 5 to 10 minutes.

For the best results, basil should be stored on the countertop at room temperature. You can wrap the leaves in a damp paper towel and keep it in a loose plastic bag. For basil with stems, put it in a glass jar like a flower bouquet with a few inches of water. Put a clear plastic bag on top and change the water every day.

Boil for 1 minute, stirring occasionally. Add basil sprigs, lemon juice, and lemon zest. Remove from heat and allow to cool for about 20 minutes. Pour into a 9x13-inch metal baking pan or two 8-inch metal cake pans. Place in the freezer for about 30 minutes. Remove basil leaves and stir. Freeze for 6 to 8 hours, stirring sorbet with a fork.

Add the sauce and 1/4 cup of the pasta cooking water and cook, tossing constantly, until the sauce coats the pasta, adding more pasta water as needed. Taste and season with more kosher salt as needed. Discard the basil sprig. Serve the pasta garnished with the basil and Parmesan if desired.

Add garlic and crushed red pepper flakes and sauté for 1-2 minutes, stirring frequently, until combined. Add remaining ingredients.
